Recipe Ingredients for Gado Gado

8 oz tempeh
1 tsp soy sauce
1 1/2 c red potatoes (diced and cooked)
2 c sweet potatoes (diced and cooked)
3/4 c. peanut butter
14 oz tomatoes (can of diced save the juice to the side)
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cayenne pepper
1/4 tsp fenugreek seeds or garam marsala
1 c onion
3 cloves garlic minced
2 c. mushrooms (sliced)
2 carrots cut in 1/2" slices
1 1/2 c pepper (1 green 1 red or yellow Diced 1/2" slices)
2 1/2 c tomato (wedges)
1/2 c vegetable broth
1/4 c peanuts
1 c fresh baby spinach

Recipe Directions for Gado Gado

  1. Cube the tempeh and brown by grill or broil until golden

  2. Boil potato

  3. Blend the tomato and peanut butter with spices

  4. Saute onion, garlic, carrots, until tender. Add the mushrooms and pepper cook for 10 minutes. Add the sauce, veggie broth and liquid from tomatoes and potatoes simmer for 10 minutes. Garnish with spinach and peanuts.
