1 cup Rogers All Purpose Flour
1 cup Breakfast Cereal
3/10 cup Sugars, Granulated
14 grams Baking Powder
1/2 tsp Salt, Table
1/4 tsp Nutmeg, Ground
1/2 tsp Cinnamon, Ground
1 large Egg, Whole
3/4 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 cup (not packed) Raisins, Seedless
1 1/2 medium (3") Apples
1/4 cup Vegetable Oil, Canola

Recipe Directions for Fv-Oatmeal Apple Raisin Muffins

  1. Preheat oven to 400 degrees.

  2. In a medium sized mixing bowl, whisk together the dry ingredients: flour, oats, sugar, baking powder, salt, nutmeg, and cinnamon.

  3. Make a well in the center of the mixture. Add the egg, milk, raisins, apples, oil, and applesauce. Stir until moistened (don't stir too long!).

  4. Pour batter into 12 greased or paper-lined muffin cups. Bake at 400 degrees for 15-20.

  5. Cool muffins on a wire rack. Enjoy warm or cold.
