Roasting veggies brings out the flavor...the cherry tomatoes will burst a bit, creating just enough saucy juice. I used penne, the original recipe in "Appetite for Reduction" by Isa Chandra Moskowitz calls for fusilli.

Recipe Ingredients for Fusilli Roasted Veggie Primavera

8 oz dry Whole Wheat Penne
16 oz Squash, Summer, Zucchini, Includes Skin
16 oz Yellow Squash
8 oz Asparagus
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
120 grams Red Onions
1.5 cup Organic Cherry Tomatoes
6 clove Garlic
2 tsp Spices Oregano Leaves
2 tsp, leaves Thyme, Dried
1 tbsp Olive Oil
0.5 tsp Kosher Salt
0.5 tsp Pepper, Black
2 serving VIGO BALSAMIC VINEGAR
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for Fusilli Roasted Veggie Primavera

  1. Preheat the oven to 450 F. Line two large baking sheets with parchment paper and mist with nonstick cooking spray.

  2. Place all the veggies in a large mixing bowl along with the oregano and thyme. Drizzle with olive oil and sprinkle with salt and pepper. Use your hands to toss, making sure all the veggies are coated.

  3. Place in a single layer on both pans. Bake for 15 minutes on separate racks, remove them from the oven andflip the veggies. Now is a good time to start your water for pasta. Place the veggies back in the oven, putting the pan that was on the top rack on the bottom and vice versa. Bake for 15 mor minutes or until tender. The asparagus tips should be frizzled, the zukes should be tender and the tomatoes should be bursting. While they are finishing their roast, cook the pasta according to package directions, drain in a colander and set aside.

  4. Once the veggies are done, transfer them back to the big mixing bowl. Toss with balsamic vinegar. Add the pasta and toss to coat. Taste for salt and pepper and serve, topping with fresh basil if desired.
