Recipe Ingredients for Fusilli alla Pappone

2 tablespoons olive oil
1 pound zucchini, julienned
1/2 pound pasta (fusilli)
2 tablespoons butter
2 tablespoons olive oil
1 teaspoon flour
1/3 cup skim milk
2/3 cup chopped fresh basil
1/4 teaspoon salt
1 egg yolk, lightly beaten
1/2 cup grated parmesan cheese
1/4 cup parmesan cheese, grated

Recipe Directions for Fusilli alla Pappone

Heat oil in med skillet over med-high heat. Add zucchini in small batches and sauté until lightly browned. Drain on paper towels.Cook fusilli until al dente.Heat 1T butter with olive oil in large skillet over med-high heat. Dissolve flour in milk. Reduce heat and add milk to butter. Stir 30 seconds. Add zucchini, basil, and salt and stir to heat through. Remove from heat and stir in remaining 1T butter. Beat in yolk and add cheeses.Toss pasta in large bowl with sauce.
