Cheesy Potatoes. Good for potlucks or a side dish at dinner time.

Recipe Ingredients for Funeral Potatoes

3 cups milk
1/2 cup butter
1/2 lb sharp cheddar cheese, shredded
1/2 lb colby jack cheese, shredded
1/3 cup flour
2 tbsp mustard
1 tsp salt
1 tsp pepper
3 tbsp jalapenos, diced
6 medium potatoes, cubed

Recipe Directions for Funeral Potatoes

  1. Clean and dice potatoes, one inch cubed.

  2. To make the cheese sauce, pour milk in sauce pan and warm on medium heat. Be careful not to scorch milk. Add and melt butter in milk. Use whisk to blend flour in to milk/butter blend. Add mustard, salt, pepper and diced jalapenos to sauce. When sauce starts to bubble, add shredded cheese one handful at a time. Whisk until the cheese no longer has form.

  3. Add to cheese sauce and diced potatoes to casserole dish. Cover with foil or dish top. Bake at 350 for 45 minutes.

  4. Let sit for 10 minutes. Sauce will thicken.
