Recipe Ingredients for Full meal muffins

4 cups whole wheat flour
2 tsp cinnamon
4 tsp baking powder
2 tsp baking soda
2 tsp ginger
1/2 tsp nutmeg
4 ripe bananas
6 tbsp molasses
1 cup apple juice
4 tsp vinegar
2 cups zucchini
2 cups carrots
3/4 cup walnuts
3/4 cup currants
1/3 cup wheat germ
1/2 cup oatmeal

Recipe Directions for Full meal muffins

  1. combine all dry ingredients.

  2. mix banana, juice, molasses, and vinegar in vitamix until smooth.

  3. shred 2 zucchini and 2 carrots. chop walnuts.

  4. add wet to dry. fold in veg, fruit, nuts.

  5. pour into muffin cups- pretty full, they can take it.

  6. bake at 375 degrees for 20 minutes.
