Recipe from Vegan Lunchbox, slightly altered. Prepare them on a Sunday and you have a quick and easy breakfast or snack for the week!

Recipe Ingredients for full meal muffins

1 cup white flour
1 cup whole wheat pastry flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger, ground
1/2 tsp vanilla extract
2 tbsp flax seeds, ground
1/2 cup walnuts
1/4 cup almonds
1/2 cup raisins
2 bananas
3 tbsp molasses
1/2 cup apple juice
1 tbsp apple cider vinegar

Recipe Directions for full meal muffins

  1. Preheat the oven to 350 degrees F. Spray muffin tins with nonstick cooking spray and set aside (I've found paper liners stick badly to this recipe, so I suggest using cooking spray, nonstick muffin tins, or aluminum liners).

  2. Combine the flour, baking powder, baking soda, spices, and flax seeds in a large bowl.

  3. In a blender or food processor, combine the bananas (better if very ripe), molasses, apple cider vinegar, vanilla extract, and apple juice and blend until smooth.

  4. Combine the wet and dry ingredients, mix well (add more apple juice if too thick), and then add the nuts and dried fruit.

  5. Divide into even servings in the muffin tin. Bake for ~20 minutes or until the tops spring back and an inserted toothpick comes out clean.
