Recipe Ingredients for Fudgy Mint Fallen Souffle

1/2 cup water
1/2 cup mint leaves
2/3 cup unsweetened cocoa
2 tbsp butter
3 tbsp flour
1 c milk
1/2 c sugar
1/8 tsp salt
4 egg whites
2 tbsp sugar

Recipe Directions for Fudgy Mint Fallen Souffle

  1. boil water. Combine boiled water and fresh mint leaves into a small bowl. Cover and steep 20 minutes.

  2. Preheat oven 375 degree

  3. Strain mint mixture through a fine sieve into a large bowl. Discard the mint leaves. Add cocoa to water, stir well with whisk.

  4. Melt butter in a small saucepan over medium heat. Add the flour, stirring with whisk. Cook for 1 minute, stirring constantly. Stir in mil, 1/2 cup sugar and salt, cook over medium heat 3 minutes or until thick (it'll look like pet milk). Remove from heat, stir into cocoa mixture, Cool slightly.

  5. Please egg whites in large bowl, beat with mixer at high speed until foamy. Add 2 tbsp sugar, 1 at a time, beating until stiff peaks form. Gently stir 1/4 of egg white mixture into cocoa mixture; gently fold in remaining egg whites mixture. Spoon into a 2-quart souffle dish, coated w/cooking spray. Bake at 375 degree for 30 minutes or until puffy and set. Let stand 5 minutes (the souffle will fall during standing). Sprinkle with powdered sugar (lightly), garnish with mint springs. Serve warm or at room temperature.
