The closest I've been able to make to the real Mackinac Island fudge: smooth, rich, creamy, and nearly foolproof without using marshmallow cream.

Recipe Ingredients for Fudge

1/2 cup milk
1/2 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup cocoa
1/8 tsp salt
2 cups powdered sugar
1 tsp vanilla

Recipe Directions for Fudge

  1. Butter an 8 x 8 casserole dish and set aside.

  2. Combine milk, butter, sugars, cocoa, and salt in a medium saucepan. Cook over medium low heat while stirring constantly until mixture comes to a full boil (boiling consistantly all over the surface of the candy).

  3. Boil 6 minutes, still stirring constantly. Immediately remove from heat and beat in powdered sugar and vanilla. Pour immediately into prepared dish and allow to cool completely before cutting.

  4. Options:

  5. Chocolate Peanut Butter Fuge - decrease butter to 1/4 cup and add 1/4 cup peanut butter to the sugar/milk mixture.

  6. Maple-Pecan Fudge - omit cocoa and vanilla and add 1/2 cup chopped pecans and 1 tsp maple flavoring with the powdered sugar.

  7. Chocolate-Walnut Fudge - add 1/2 cup chopped walnuts with the powdered sugar.

  8. Cherry Cordial Fudge - omit vanilla, add 1/2 cup maraschino cherry halves and 1 tsp almond extract with the powdered sugar.

  9. Chocolate Peppermint Fudge - substitute 1 tsp peppermint extract for the vanilla. Can also make it without chocolate and add peppermint extract and 1/2 cup chopped candy canes.
