A quick and easy eggplant parmesan recipe

Recipe Ingredients for Fry/Bake Eggplant Parmesan

1 large eggplant
1 cup tomato basil pasta sauce
6 oz part skim mozzarella cheese
1/2 cup italian breadcrumbs
3/20 cup canola oil
1 cup ricotta cheese
1 egg

Recipe Directions for Fry/Bake Eggplant Parmesan

Preheat oven to 350. Heat canola oil in a large deep pan on medium. Cut eggplant into 6, 1/2 inch round medallions. Wisk the egg and 1 tbsp water together. Dip eggplant in egg/water mixture and then coat with a layer of bread crumbs. Place eggplant rounds in canola oil and cook until golden brown, flipping once so both sides are evenly cooked. When cooked to your liking, remove eggplant rounds and place on a paper towl to absorb extra oil. When eggplant is slightly cool, place in a large baking dish and cover each eggplant with an equal amount of tomato sauce. Cover each round with a dab of the ricotta cheese and then top with a slice of mozzarella. Bake for 20 minutes.
