Recipe Ingredients for Fruity Stuffed Peppers with Cous-Cous GI Jane

2 red peppers
1 1/2 oz couscous
1/4 pint (hot vegetable) stock
1 oz raisins
1/2 oz almonds, sliced
1 spring onion, finely chopped
1/2 apple, grated
1 pinch cinnamon
1 pinch chili powder
1 tsp olive oil
1 salt and pepper

Recipe Directions for Fruity Stuffed Peppers with Cous-Cous GI Jane

  1. Start by cutting off the tops of the peppers and taking out the seeds. Place them in a microwave-proof dish with a tablespoon of water, cover with cling-film and cook on high for 2 minutes.

  2. Preheat the oven to 200C

  3. Place the cous-cous in a small pan with the hot vegetable stock and bring to the boil. Turn off the heat, cover and allow to soak for three minutes.

  4. Drain the cous-cous and add to a bowl with the spring onion, apple, nuts, raisins, olive oil and seasong. Mix well and use to stuff the steamed peppers

  5. Bake for 20 minutes.
