Use for strawberry-poppyseed salad (bed of romaine w/ straws, rasps, pineapple, mand. oranges, pecans- drsg. over top)

Recipe Ingredients for Fruity Poppyseed Dressing

1/4 c. raspberry jam
1 tbsp. honey
1/4 c. apple cider vinegar
1 tbsp. lemon zest
2 tbsp. lemon juice
3 tbsp. poppy seeds
3 tbsp. extra-virgin olive oil

Recipe Directions for Fruity Poppyseed Dressing

  1. Whisk together honey and jam in pyrex measuring cup or bowl.

  2. Microwave 30-45 seconds, whisk again to smooth lumps.

  3. Add remaining ingredients except oil, whisk well with fork.

  4. Add oil in a slow, steady stream while whisking vigorously. Refrigerate up to 3 days before using, re-whisk to combine.
