Recipe Ingredients for Fruity Curried Lentil Salad

1 cup Pineapple Chunks in 100% Juice
0.5 cup Quinoa
0.5 cup Organics Green Lentils Dry
2 tsp Curry Powder
2 serving no name unsweetend coconut
1 oz Pecans Chopped
0.5 medium raw Onion Red

Recipe Directions for Fruity Curried Lentil Salad

  1. Pour pineapple juice into pitcher and add water to total 2 cups. Set pineapple chunks aside. Pour liquid into a saucepan and stir in the quinoa and lentils. Season with salt, pepper if desired and curry powder. Bring to a boil over high heat, then reduce heat to medium low, cover and simmer until the lentils and quinoa have absorbed the water-about 30 minutes. Stir in the coconut and simmer for 5 minutes more.

  2. Stir in the pineapple chunks, pecans and onion, cook briefly to reheat. Sprinkle with parsley or cilantro.
