Crisp and crunchy side dish, dressed with an easy homemade orange vinaigrette is packed with fresh flavors from fruit, zippy ginger and a garden of good for you veggies!

Recipe Ingredients for Fruity Coleslaw

1/4 c oil
3 T orange juice
2 T apple cider vinegar
1 T splenda
2 t grated orange zest
1 t grated ginger
1 t salt
1/4 t pepper
16 oz shredded cabbage
1 c red cabbage
1 c grated carrots
1 c fresh pineapple chunks
2 scallions, chopped
2 T chopped parsley

Recipe Directions for Fruity Coleslaw

  1. In serving bowl, whisk together oil, juice, vinegar, splenda, zest, ginger, salt and pepper until well blended

  2. Add cabbage (or coleslaw mix), red cabbage, carrots, pineapple, scallions and parsley. Toss to coat. Cover; refrigerate for at least 1 hour. Toss just before serving
