Can substitute canola oil for the butter, leave out the coconut and increase the dried fruit a bit and almonds to 1/3 c. Can double recipe & cook in 8 X 12 Pyrex pan--bake at 325 for 45 minutes (check with toothpick), turn off oven, and leave in 5 more minutes.

Recipe Ingredients for Fruity Coconut Bars

1/4 c brown sugar (Sucanat)
1 egg
2/3 c whole wheat pastry flour
1 c rolled oats
1 t vanilla
1/4 c butter
1/2 c maple syrup
1/4 c finely chopped roasted almonds
1/2 t baking powder
1 oz unsweetened dried coconut
1 1/2 oz dried pineapple, chopped
40 g (1/4 c) raisins

Recipe Directions for Fruity Coconut Bars

Cream the brown sugar and butter with a hand mixer. Add egg and mix until thoroughly incorporated. Add vanilla and maple syrup and mix. In separate bowl, combine all the dry ingredients. Mix the dry into the wet, stirring until just blended. Pour/pat into a greased 8 X 8 pan and bake at 350 degrees (325 for a glass pan) for 30 - 35 minutes. I cooked 30, turned off the oven and left it in for 5 more minutes. Let cool and cut into 16 pieces.
