Recipe Ingredients for Fruity Basmati with Chicken (6 servings)

1 cup basmati rice
2 cups chicken
1/2 cup raisins
1/2 cup dried apricots
1/2 cup Cherries Dried Fruit
1/2 cup cashews
1 small tart apple
1 small sweet apple
1/2 cup green onions
2 tsp curry powder
1 tsp butter

Recipe Directions for Fruity Basmati with Chicken (6 servings)

  1. Cube and cook chicken

  2. Cut apricots into tiny pieces

  3. Cut cherries into tiny pieces

  4. Dice both apples

  5. Chop onion

  6. Cook rice according to package directions.

  7. In the last 2 minutes of cooking, add chicken, raisins, apricots and cherries.

  8. Drain, return to the pan and cover

  9. Use a heavy-bottomed skillet to heat the cashews, apples, green onions, curry powder and butter

  10. Dump this mixture in with the rice, and stir to blend,.

  11. Serve hot
