Recipe Ingredients for Fruity Baked Oatmeal

3 cups quick-cooking oats
1 cup honey
2 teaspoons baking powder
1/4 tsp baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 eggs, lightly beaten
1 cup 2% milk
1/2 cup (112 g) smart balance light, melted
1 medium chopped peeled apple
1 cup chopped (canned) peaches
140 g (1 cup) frozen blueberries

Recipe Directions for Fruity Baked Oatmeal

  1. Ask Mommy to peel and chop an apple. Ask Mommy to turn on the oven to 350 degrees.

  2. Get a large bowl. Mix together the oats, baking powder, baking soda, salt, and cinnamon. Set this bowl aside for now.

  3. Get a 1-cup measuring cup. On a cutting board, cut up some peaches and put the pieces into the measuring cup until it's full.

  4. Get another 1-cup measuring cup. Measure the frozen blueberries. (It's ok if there's not enough)

  5. Get another large bowl. Crack the eggs into it. Beat the eggs with a fork.

  6. Measure the Smart Balance into a small microwavable bowl. Heat it for 30 seconds to melt it. Heat it again for another 10 seconds if needed to melt it all.

  7. Get a 1-cup measuring cup. Measure the milk. Add it to the eggs.

  8. Coat the measuring cup with nonstick spray. Pour the honey into it. Add it to the eggs and milk. Mix well with the fork.

  9. Add the melted Smart Balance to the eggs, milk and honey. Mix well.

  10. Mix together the wet ingredients and the dry ingredients in whichever bowl is biggest.

  11. Pour all the fruit into the biggest bowl with the rest of the batter. Carefully stir it all together.

  12. Get the 8-inch by 8-inch square baking dish. Coat it with nonstick cooking spray.

  13. Pour the batter into it.

  14. Open the oven door all the way. CAREFULLY place the baking dish in the oven and slide it to the center.

  15. Close the oven door. Let the batter bake for at least 30 minutes. Then check on it to see if the center is still mushy.

  16. It needs to be soft like a muffin or cake. You can tell it's done if you can put a knife into the center and when you take out the knife there is not any gooey batter still stuck to it. Bake as long as needed, checking on it every few minutes after the first timer (after 30 minutes) goes off.
