These hearty muffins are sure to warm you from the inside out. Great with coffee or a side dish of fruit.

Recipe Ingredients for Fruity Apple Oat Bran Muffins

1 c. Bran Buds
1 cup rolled oats
1/2 c. fat free milk
1/2 cup plain nonfat yogurt
1 1/2 c. Applesauce
2 egg
1/2 cup sugar
1 tbsp Vanilla Extract
1 c. whole wheat flour
2 t. baking powder
1/3 t. Baking Soda
1/2 t. salt
1 t. cinnamon
1/2 t. nutmeg
1/2 t. ginger
1/2 t ground cloves
1/2 cup raisins
1/2 cup dried apricot
1/2 cup dried dates, chopped
2 cup apple, chopped
3/4 cup sunflower seeds
1/4 cup Milled Flax Seed

Recipe Directions for Fruity Apple Oat Bran Muffins

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Spray muffin pan.

  3. Combine oats and milk, yogurt and applesauce in a small bowl, let stand.

  4. Sift together the flours and all dry ingredients.

  5. Mix together the egg, sugar, and vanilla.

  6. Mix the oats and milk mixture into the egg mixture.

  7. Fold in the dry ingredients.

  8. Fold in raisins and other fruit and seeds.

  9. Transfer into prepared pan.

  10. Bake 15 to 20 minutes for muffin tin.
