Recipe Ingredients for Fruited Rice Pudding

2 cup rice
1 cup wheat bran, raw
100 g apricot, dried
200 g prunes, dried
2 cup 1% milk
4 cup water
1 t cinnamon

Recipe Directions for Fruited Rice Pudding

  1. Soak dried fruit in water until plump. Drain and dice.

  2. Rince rice to remove some of the starch.

  3. Place water and fruit into sauce pan and bring to boil. Reduce heat and simmer until fruit is incorporated into water.

  4. Add milk, rice and cinnamon. Bring back to a boil. Reduce heat and simmer, covered, until rice swells enough to be seen on surface.

  5. Turn off heat and allow stored heat to continue cooking for another ~15 minutes.

  6. Adjust seasoning to taste.
