quinoa, lentils, dried blueberries and cranberries, slightly sweet, cold pilaf. great side dish, complete protein. Vegetarian.

Recipe Ingredients for A's Fruited Quinoa and Lentil Pilaf

1 1/4 cups quinoa
60 g green bell pepper, finely chopped
55 g grated carrots
1/4 cup cilantro, torn
1/2 cup dried cranberries
1/2 cup dried blueberries
1/4 cup black beluga lentils
12 oz apple cider
4 tbspn honey
24 g fresh squeezed lemon juice

Recipe Directions for A's Fruited Quinoa and Lentil Pilaf

  1. Cook quinoa in rice cooker or on stove top in water ? bring to a boil, then reduce to a simmer and cover. Cook for approx 15 minutes without stirring until water is absorbed.

  2. I used pre-cooked lentils, but if using dry, cook according to directions (1/4 is dry measurment--i used 1/2 cup cooked).

  3. Remove cover, reduce heat seating to lowest setting and cook off moisture for 2-Remove from heat and cool to room temperature.

  4. Bring apple juice/cider and honey to a boil (microwave), stir to ensure honey is fully dissolved and squeeze in juice of a lemon.

  5. Once quinoa is mostly cooled, toss with bell pepper, carrots, cilantro, cranberries, blueberries, and lentils.

  6. Stir in sauce and mix well.

  7. Refrigerate for 2 hours or overnight.

  8. Serve cold.
