Easy, fast and delicious pork tenderloin - great company fare

Recipe Ingredients for Fruited Pork Tenderloin

1 1/2 pounds pork tenderloin, trimmed
1/4 cup light brown sugar, packed
1/4 cup orange marmalade
1/4 cup beef broth
1/4 cup red wine
1/4 cup dried apricots, chopped
1/4 cup raisins

Recipe Directions for Fruited Pork Tenderloin

  1. Place tenderloin in a roasting pan. In a small saucepan, heat marmalade with brown sugar until sugar is dissolved; brush over pork. Add broth, wine, apricots and raisins to the pan. Cover and bake at 350° for about 45 minutes, or until no longer pink and a meat thermometer registers at least 160° in the center, basting frequently with pan juices. Serve sliced, with sauce and fruit spooned over top.

  2. Serves 4 to 6.
