Recipe Ingredients for Fruited Barley Oatmeal Porridge

1/2 c. pearled barley
1/2 c. steel cut oats
1/4 c. chopped dried apricots
1/3 c. brown sugar
1/2 t. salt
4 1/2 c. water
1/2 t. vanilla
1/8 t. cinnamon
1/8 t. ground cardamom

Recipe Directions for Fruited Barley Oatmeal Porridge

  1. Coat a slow cooker with nonstick stray. Before going to bed, add the barley, oats, apricots, sugara, salt and water to the pot. Turn the heat to low, and cook overnight or for 6-8 hours.

  2. Just before serving, stir in the vanilla, cinnamon, cardamom. If desired, top each serving with fresh blueberries and/or nonfat milk or soy milk.
