Recipe Ingredients for Fruit Upside Down Pudding

50 g butter
50 g self-raising flour
50 g caster sugar
1 egg
100 g tinned apricot
1 tablespoon brown sugar

Recipe Directions for Fruit Upside Down Pudding

  1. Preheat the oven to 180 C. Grease an 18 cm diameter cake tin.

  2. Sprinkle sugar over the base of the tin.

  3. Drain the fruit using a sieve

  4. Arrange the fruit in the tin.

  5. Put the remaining ingredients into a mixing bowl and beat well until smooth.

  6. Pour the batter over the fruit.

  7. Bake until firm and golden brown, 25-30 minutes.

  8. Allow to cool in the tin for several minutes before running a knowfe around the rim to loosen the pudding. Invert a plate over the pudding and turn it out.
