Fantastic oatmeal muffins - one muffin can be breakfast, easily!!

Recipe Ingredients for Fruit Oatmeal Muffins

1 1/4 cups rolled oats
1 1/4 cups whole wheat flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 cup milk
1 egg
1/4 cup apple sauce
3/4 cup granny smith apple
1/4 cup flax seed
1/2 cup chocolate chips
1/4 cup walnut pieces

Recipe Directions for Fruit Oatmeal Muffins

  1. Preheat oven to 425 degrees.

  2. Combine oats, flour, 1/3 C sugar, baking powder and salt in a bowl

  3. In another bowl, combine milk, egg

  4. Add liquid ingredients to the dry ingredients, mix until moist only - Do Not Beat mixture

  5. Fold in fruit, nuts and chocolate chips

  6. Fill greased muffin cups 2/3 full.

  7. Bake 20- 25 minutes.

  8. Serve warm.
