Modified from a recipe of Alton Brown's show, Good Eats. I used less sugar, no oil, more oats, more pecans. I also use vanilla/ butter/ nut flavoring instead of plain vanilla. It's a quick low calorie/low fat/low cholesterol/low salt breakfast or snack. One of these and a cup of coffee is all I need!

Recipe Ingredients for Fruit & Oat Granola Bars

1 egg
1 egg white
3/4 cup brown sugar
1 tsp cinnamon
1/4 tsp salt
1 tsp vanilla extract
2 cups oats
2/3 cup dried cranberries, chopped
1/2 cup pecans, chopped
1 tbsp flour

Recipe Directions for Fruit & Oat Granola Bars

  1. Preheat oven to 350. Spread oats on a baking sheet and bake 15 minutes. Reduce oven to 325. Line muffin tins with paper muffin cups and spray with Pam.

  2. Whisk egg, egg white, sugar, cinnamon, salt & vanilla. In a separate bowl, toss nuts & berries with flour.

  3. Combine all ingredients (including toasted oats) and press mixture equally into muffin cups.

  4. Bake 30 to 35 minutes. Cool slightly and remove paper cups.

  5. Store by sealing individually in plastic wrap.
