More like a dense bread, like banana bread, but hearty and sweet, like a breakfast bar. It's not as nutritionally rich as I had planned, but it is a healthy and filling snack option! (Add any seeds, wheat germ or whey for more daily value.)

Recipe Ingredients for Fruit & Nut Oat Bar

1 cup whole wheat flour
3 cups organic rolled oats
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1 pinch salt
1/4 cup brown sugar
1/3 cup honey
1 tsp pure vanilla extract
1 cup applesauce
2 eggs, beaten
1/2 cup organic vanilla soymilk
1 apple, finely chopped
1 cup dry roasted almonds, chopped
1/3 cup raisins
1/3 cup craisins
1/3 cup pitted prunes, chopped

Recipe Directions for Fruit & Nut Oat Bar

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl, mix together dry ingredients. (flour, oats, baking powder, baking soda, cinnamon, clove, nutmeg, ginger and a pinch of salt.)

  3. In a smaller bowl, combine applesauce, honey, brown sugar, eggs, vanilla and milk. Mix well.

  4. Add wet mixture to dry mixture. Mix until combined.

  5. Stir in raisins, craisins, chopped prunes, chopped apple and chopped almonds.

  6. Spread in the bottom of a greased 9x12 pan. Bake in 350 oven for 20-25 min. Let cool and cut into squares.
