This is the winner! Cooked perfectly moist. You can substitute graham flour for about the same nutritional value as the soy flour.

Recipe Ingredients for Fruit & Nut Cookies

1 c rolled oats
3/4 c gold medal whole wheat flour
1/4 c soy flour
1/4 c wheat bran
1 tsp baking powder
2 tsp cinnamon
1 pinch ginger
1 pinch nutmeg
1/2 c splenda no calorie
1 c pumpkin puree
1 egg
3 tbsp agave syrup
1/3 c nonfat yogurt
1/4 tsp salt
2 tbsp chopped prunes
3 tbsp craisins, chopped
1/4 c dried apples, chopped
1/4 c walnuts, chopped
1/4 c flaxseed meal
28 grams whey protein

Recipe Directions for Fruit & Nut Cookies

  1. Preheat oven to 350. I use convection.

  2. Mix all dry ingredients in a small bowl, including fruit & nuts. You can use any combination of fruits: apricots, craisins, apples, raisins, prunes, cherries, etc.

  3. Mix the wet ingredients in a medium bowl.

  4. Add dry to wet and mix just until thoroughly blended.

  5. Scoop 12 blobs onto a silicone baking mat or greased baking sheet. Flatten with a silicone spatula (or damp fingers) into a cookie shape. They will not spread as there is no butter. However you shape them is how they will cook. Make them smaller if you like.

  6. Bake 11 minutes. Adjust baking time if you make them smaller. Allow to set on pan for 3 minutes, then transfer to cooling rack.

  7. Wrap individual cookies in plastic wrap and keep in fridge or freezer.
