Recipe Ingredients for Fruit & Nut Bread

1 3/4 cup whole wheat flour
2/3 cup wheat bran
1/4 cup flaxseed meal
1/2 cup turbinado sugar
2 g baking powder
9 g baking soda
4 g salt
4 g ground cinnamon
1/2 cup cranberries
1/2 cup Apricots, diced
2/3 cup dates
1/4 cup pecans, chopped
3/4 cup Apple Juice
14 g Olive Oil
7 g dried Orange Peel
1 Organic egg, lightly beaten

Recipe Directions for Fruit & Nut Bread

  1. PREPARATION:

  2. Preheat oven to 35OF. Combine flour and next 6 ingredients (flour through ground cinnamon) in a large mixing bowl. Stir in cranberries, apricots, dates and pecans. In a separate bowl, combine juice, oil, orange peel and egg. Add wet ingredients to flour mixture, stirring just until moist. Spoon batter into a 9 x 5 inch lightly greased loaf pan.

  3. Sprinkle top with TFM Sweet Spice Rub (optional). Bake for 40-50 minutes or until a wooden pick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack. Remove from pan and cool completely on wire rack. Feel free to personalize this recipe by substituting any combination of dried fruit totaling 1% cups plus 14 cup chopped nuts of your choice.
