Yummy moist sweet bread! Substitute quinoa flour for the regular flour and succanat for the sugar. I also use a fresh vanilla bean in place of the vanilla extract.

Recipe Ingredients for Fruit Nut bread

1 3/4 cup flour
3/4 cup oat flour
1 cup applesauce
1/2 cup butter
1 cup sugar
3/4 cup chopped walnuts
1 medium granny smith apple, grated
2 tsp baking soda
1/2 tsp vanilla
1/2 tsp salt
2 tsp cinnamon
1 cup raisins
3 large eggs
1/8 cup orange juice
1/2 cup fresh pineapple

Recipe Directions for Fruit Nut bread

  1. Preheat oven to 350.

  2. Soak raisins in orange juice.

  3. In a standing mixer cream butter and sugar together.

  4. Beat in eggs one at a time.

  5. Stir in applesauce, Grated apple, raisins (strain and discard orange juice)Vanilla and pinapple.

  6. In a separate bowl combine quinoa flour, ouat flour, baking soda, salt, cinnamon and walnuts.

  7. Stir dry ingredients into wet mixture.

  8. Turn into buttered and sugared loaf pan.

  9. Bake at 350 for 50-60 minutes, or until toothpick insterted in the denter comes out clean. Cool 10 minutes before removing from pan.
