These truffles keep quite well in an air-tight container at room temperature for about a week; even longer if stored in the refrigerator.

Recipe Ingredients for Fruit & Nut Bar, Blueberry Coconut Pie

40 grams Dates, Domestic, Natural And Dry
40 grams Dried Blueberries (System Frugt)
30 grams Unsalted Cashews, Urtekram
5 grams Shredded Coconut, Unsweetened

Recipe Directions for Fruit & Nut Bar, Blueberry Coconut Pie

  1. Lay out three pieces of plastic wrap, each about the size of a half sheet of paper.

  2. Place dates, dried blueberries, 1/4 tsp vanilla extract, scant 1/4 tsp coconut extract and a dash of salt into the bowl of a food processor, and process until they form a chunky paste, about 20-30 seconds.

  3. Place cashews and shredded coconut into the food processor bowl along with the dried fruit paste, and process until mixed, about 10-20 seconds. Remove mixture from food processor.

  4. This step is optional: ?Knead? extra 1 Tbsp dried blueberries into the dough, until well-incorporated. The mixture will be sticky.

  5. Shape into three 40g bars (or roll into 8 small balls for delicious one-bite threats) and wrap each piece in plastic wrap.

  6. Store in the refrigerator.

  7. TIP! How to form the bars without getting sticky fingers: Place each lump on each of one of the sheets of plastic wrap. Wrap the plastic around each bar and start squishing into a bar shape form; press against countertop to flatten bottom side, flattening top side and ends with flat of hand.
