Makes 36 servings



the serving size is one regular muffin. I've also made mini muffins and giant muffins with this recipe and they turn out great and delicious.

Recipe Ingredients for Fruit Muffins

1 stick of butter
1 cup of applesauce
1 cup of apple juice
1 cup of water
5 eggs
2 tsp vanilla
3 cups all purpose flour
1 cup whole wheat flour
1/2 cup flaxseed, ground
1/2 cup wheat germ
1 cup walnuts or pecans, chopped
2 cups sugar
4 1/2 teaspoons baking powder
2 1/4 teaspoons salt
2 cups dried cranberries or other dried or frozen fruit

Recipe Directions for Fruit Muffins

  1. Preheat to 375.

  2. Melt butter.

  3. Mix butter, juice, water, eggs, applesauce, and vanilla.

  4. In another bowl, mix flours, flax, germ,nuts, sugar, baking powder and salt. Combine.

  5. Stir in fruit or chocolate chips.

  6. Makes about 3 dozen regular sized muffins.

  7. Bake for 15-25 minutes
