Recipe Ingredients for Fruit Cocktail Cake


Cake:
2 eggs
1 1/2 c. sugar
2 c. self rising flour
1 3/4 c. fruit cocktail
1 tsp. baking soda
1/2 c. brown sugar
1/2 c. chopped pecans

Icing:
1/2 c. evaporated milk
1 stick butter
3/4 c. sugar
1/2 c. coconut

Recipe Directions for Fruit Cocktail Cake

  1. Cream together eggs and sugar. Add flour and soda. fold in fruit cocktail. Pour into slightly greased/floured 9 x 13 pan. Sprinkle brown sugar & nuts on top. Bake for 40-45 minutes at 350.

  2. Icing: Cook until boiling milk, butter, rest of sugar and coconut. Pour over cake while icing is still hot.
