Rich moist cake vegan friendly tastes a bit like Malt Loaf

Recipe Ingredients for Fruit Cake

1 pint hot water
9 oz All Bran
8 oz dried cranberries
8 oz currants
6 oz sultanas
9 oz brown sugar
3 oz Wholemeal flour
6 oz self raising flour
5 grams baking powder

Recipe Directions for Fruit Cake

  1. Put all the ingredients except the flour into a covered bowl and leave to soak for an hour or so

  2. Mix the baking powder into the flours

  3. Add the flour mixture to the fruit mix, stir in well, you might need a little more water at this stage

  4. Pour into a 2 lb lined loaf tin

  5. Bake in oven for about an hour at Gas mark 4, 350F or 180C

  6. That's it really.

  7. Cake must be wrapped in foil and allowed to stand for 3 to 5 days before eating.
