this recipe was originally for a blueberry breakfast cake, but all I had was strawberries. And so it goes.

Recipe Ingredients for Fruit Breakfast Cake

1 cup oats
1 cup whole wheat flour
1/2 cup sugar
2 tsp baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon flax seed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon salt
1 1/4 cup strawberries, halved
1/2 cup water
1 tablespoon lemon juice
1/3 cup unsweetened applesauce
1/2 teaspoon vanilla extract
2 tablespoons sugar (a coarse sugar for topping)
1/2 teaspoon cinnamon
