Excellent breakfast muffins! Very moist and flavorful. Feel free to substitute blueberries for other fruit like peaches, raspberries, mangos, bananas, strawberries...you could probably even throw in some veggies like carrot or zucchini and different seasonings if you want a more savory muffin. The possibilities are endless! Have fun with it :)

Recipe Ingredients for Fruit Bran Muffins

1 1/2 cups blueberries
1 cup apple sauce
1/4 cup yogurt
1 egg
1 1/2 cups Wheat Bran
1 cup flour
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1 tsp cinnamon
1/8 tsp salt

Recipe Directions for Fruit Bran Muffins

  1. Preheat over to 375.

  2. Mix all wet ingredients together and then dump the dry ingredients on top and mix all together with a big spoon.

  3. Bake for about 15-20 mins with no paper things in a non-stick muffin pan. (Don't over-bake!!!)

  4. Makes 12 muffins.
