Quick and easy. Can add 1/2 cup of any type of dried fruit or berry.

Recipe Ingredients for Fruit & Bran Muffins

2 medium (7" to 7-7/8" long) Bananas
1 large Egg, Whole
1 tbsp Olive Oil
16 tbsp Fat Free Sour Cream
70 grams Apricots, Dried, Sulfured, Uncooked
2 tbsp Molasses, Blackstrap
1 cup Whole Wheat Flour
1 cup Wheat Bran, Crude

Recipe Directions for Fruit & Bran Muffins

  1. Mix wet ingredients, then add dry. Don't over-mix.

  2. Bake for 18-20 minutes at 350F.

  3. Makes 12 muffins.

  4. Can add cinnamon, nutmeg, ginger, etc. to taste.
