Frozen Lemon Pie Recipe

Tastes much creamier than the calorie count would indicate. Portion size is large; could make smaller.

Recipe Ingredients for frozen lemon pie

2 eggs
1/2 c sugar
1/3 c lemon juice
1 T lemon zest
1 c heavy cream
1/4 c graham cracker crumbs

Recipe Directions for frozen lemon pie

  1. Separate yolks from whites. Beat yolks, then add lemon juice, zest and all but 2 T sugar. Heat over low heat until it thickens, stirring constantly.

  2. While it cools, beat whites until frothy. Then add 2 T sugar and beat until stiff peaks form.

  3. Whip cream.

  4. Spread graham cracker crumbs on bottom of 9 inch cake pan.

  5. Fold egg whites into lemon mixture. Then fold that into whipped cream.

  6. Pour into prepared cake pan. Freeze until firm. Keeps well in freezer.
