A fun, low-fat & low-calorie treat.

Recipe Ingredients for Frog Eye Salad

12 oz pineapple, crushed own juice
12 oz pineapple, chunks own juice
12 oz mandarin oranges, own juice
1 banana
1/2 cup egg beaters
1 cup splenda
1/4 cup whole wheat couscous
2 cups whipped topping, fat free
2 oz mini marshmallows

Recipe Directions for Frog Eye Salad

Cook pineapple juice (drained from cans), eggs and splenda. Cook til a full boil. Add cooked couscous (cook from directions). Refrigerate over night. Add fruit, cool whip and marshmallows. Refrigerate a couple hours to allow flavors to mellow. Can freeze in individual portions.
