Spinach and mushroom Frittata using Egg Beaters and 2% grated cheese to decrease some of the calories and fat. Can add chopped onions, chili peppers, spices, etc. to suit individual tastes.

Recipe Ingredients for Frittata, Spinach and Mushroom

1 cup Egg Beaters
3 cups Spinach, chopped
1/4 cup Green Bell Pepper, chopped
1/4 cup Red Bell Pepper, chopped
1/4 cup Parmesan Cheese, grated
1 cup Low Fat Cheese, grated
1 cup Mushrooms, chopped

Recipe Directions for Frittata, Spinach and Mushroom

  1. Pre-heat oven to 350 degrees

  2. Chop the spinach, bell peppers, and mushrooms.

  3. Spray skillet with non-stick cooking spray and cook bell peppers for 4 - 5 minutes over low heat.

  4. Stir in chopped spinach and mushrooms and cook over low heat for another 5 - 7 minutes until spinach is slightly wilted.

  5. Remove skillet from heat and allow to cool.

  6. Mix egg beaters with cheeses and pour into vegetables and mix.

  7. Spray a 9" pie pan with cooking spray

  8. Pour vegetable and egg mix into pie pan and bake in oven for 30 minutes.

  9. Remove and let cool. Cut and serve.
