Recipe Ingredients for Frittata

1 tsp olive oil
1/2 c. sweet green pepper, chopped
2 tbsp red onion, chopped
1/2 c mushrooms, chopped
4 eggs, lightly beaten with a whisk
1/4 c. cheese, grated
1/4 tsp oregano
1/4 tsp thyme

Recipe Directions for Frittata

  1. Saute green pepper, onion and mushrooms in vegetable oil for 5 minutes.

  2. Add oregano and thyme, stir for 30 sec.

  3. Add eggs, top with cheese.

  4. Cover skillet and cook over medium heat for 10 minutes or until cooked through.
