Can be made with any vegetables and with or without meat.

Recipe Ingredients for Frittata

1 medium onion, chopped
2 small zucchini, sliced
3 green chili peppers
1 cup ham, chopped
1/4 tsp thyme
1/4 tsp pepper
2 tbsp smart balance
2 c Egg Beaters

Recipe Directions for Frittata

Saute onion, zucchini and peppers in 1 Tbsp Smart Balance. Add thyme and pepper. Add Ham and cook for about 8 min. Add eggs, cook on low for 15 minutes until just the top is runny. Put pan under broiler for 2 minutes until eggs are set and top is slightly browned.
