Eggs with potatoes, onions, red pepper, and cheese

Recipe Ingredients for Frittata

1 T olive oil
13 g butter
50 g green onion
1 clove garlic
113 g red bell pepper
442 g potatoes
6 eggs
1/4 c half and half
1/8 t salt
4 oz Gruyere cheese

Recipe Directions for Frittata

  1. Saute onions, garlic, and red pepper in oil and butter for 3 minutes.

  2. Add sliced potatoes, cover, and cook 10-12 minutes until fork tender.

  3. Whisk eggs, cream, and small amt thyme and oregano. Add salt and pepper.

  4. Sprinkle with cheese and bake at 400 for 8-10 minutes.
