A layered potato, sweet potato, courgette and onion dish similar to a quiche.

Recipe Ingredients for Frittata

1 medium potato
1/2 small sweet potato
1/2 onion
1/2 medium courgette
3 eggs
2 tbsp heavy cream
2 tbsp semi-skimmed milk
1 pinch cayenne pepper
1 pinch dried sage
1 pinch salt
3 medium streaky bacon

Recipe Directions for Frittata

  1. Thinly slice all the vegetables.

  2. Beat together eggs, cream, milk, and flavorings.

  3. Pour a little of the egg mixture into a small baking dish.

  4. Begin layering vegetables beginning with the potato. Add a little egg mixture between each layer as you go.

  5. End with a layer of potato and press down. Ensure that egg mixture reaches top layer or just below it. Mix up more egg if required.

  6. Top with bacon and bake in a moderate oven until all vegetables are cooked through and egg mixture has set.

  7. Serve with side salad for a great summer lunch or dinner. May be served hot or cold.
