Recipe Ingredients for Frittata

3/4 cup Egg Beaters
2/3 cup egg whites
1 ounce Parmesan cheese, grated
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cooking spray
1/2 cup mushrooms
1 teaspoon minced garlic
1/2 cup bell pepper, diced
1/4 cup onion, diced
2 tablespoons fresh parsley, chopped
1/4 cup reduced fat shredded cheese

Recipe Directions for Frittata

Sautee vegetables in cooking spray. Whisk eggs with salt, pepper and Parmesan and pour into pan. After it sets up on the bottom, sprinkle with parsley and shredded cheese. Place under broiler until puffed and set.
