Frittata with potatoes, mushrooms, onions, spinach

Recipe Ingredients for Frittata with potatoes, mushrooms, onions, spinach

13 eggs
2 potatoes
1 cup spinach
5 mushrooms
2 T feta
1/3 cup parmesan
1/2 onion
4 T olive oil
1/4 cup basil leaves
1/4 cup low-fat milk

Recipe Directions for Frittata with potatoes, mushrooms, onions, spinach

  1. Saute all the vegetables together until the potatoes are cooked through.

  2. In a separate bowl, beat the eggs with milk. Add the chopped basil and feta. Add to the pan with the vegetables. Cook over medium heat until only the top 1/2" of the omelet is raw. Place in the oven under a broiler to finish cooking the top.

  3. Invert onto a large serving plate and slice to serve.
