my favourite kind of omelette - cook in a cast iron pan so you can use the broiler.

Recipe Ingredients for Frittata for one

1 tsp olive oil
3 tbsp onions
3 tbsp sweet red pepper
4 mushrooms
1/2 serving Freybe, Canadian Back Bacon
2 eggs
1/4 c low fat cheddar cheese

Recipe Directions for Frittata for one

  1. brown bacon - chop

  2. brown onions and mushrooms

  3. add back bacon and peppers

  4. beat egg with a bit of water

  5. pour over ingredients and cook until mostly set

  6. add cheese over top

  7. brown under the broiler until the cheese is bubbly and the eggs rise up.
