Recipe Ingredients for frittata -mushroom, potatoe, peppers & onion

6 eggs, whole
1/2 cup mushrooms
1/2 cup bell peppers, roasted and chopped
2 medium potatoes, cubed
1 small onion, chopped
1/4 tbs butter

Recipe Directions for frittata -mushroom, potatoe, peppers & onion

  1. Saute potatoes and onion in 1/4tbs of butter, until soft. Add the mushrooms and bell peppers.

  2. Then season to your liking with pepper or other spices. I like old bay personally.

  3. Finally crack eggs in a separate bowl and use fork to mix. Pour eggs over mixture and stir slightly. After about three to four minutes. Transfer the whole thing to the oven. (make sure you have a oven proof handle on your skillet. Let bake at about 350 F until the top is golden and the center is no longer wobbly. About 15-30 min. depending on your oven and the size of the skillet.

  4. Wait about five minutes after you have pulled it from the oven and then flip onto cutting board or large plate. Cut and serve. I serve it with a dollop of light sour cream and a little salsa.

  5. Note* for this size frittata I us a 6 to 8 inch skillet.
