Breakfast Frittata muffin -Baked in nonstick tin with no flour, etc. Put between a whole wheat low fat biscuit.

Recipe Ingredients for Frittata Muffin

7 egg whites
3 eggs
12 ounces spinach
1/2 cup soy crumbles
1/2 cup parmesan cheese

Recipe Directions for Frittata Muffin

  1. Spray muffin tin.

  2. Mix ingredients together.

  3. Season with salt & pepper.

  4. Bake at 350 for 15 minutes.

  5. Remove immediately when done, so they don't stick to tin. When cool, assemble biscuits and freeze them.

  6. Wrapped in foil, assembled biscuits will reheat in toaster over set on "toast" for 15 minutes.
