Modification of a western type frittata with turkey instead of ham.

Recipe Ingredients for frittata (egg, cheddar, green pepper, onion & turkey)

3 egg Eggs
6 large Egg, White
8 oz Cheddar Fat Free
1/4 cup chopped Green Onions
4 oz Oven Roasted White Turkey
1 medium Green Bell Pepper
1 serving Cooking Spray 100% Extra Virgin Olive Oil
1 fl oz Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for frittata (egg, cheddar, green pepper, onion & turkey)

lightly mist pan with olive oil spray. cook green onions, bell pepper and ham for 5-7 minutes. Add salt and pepper as desired. pour in egg mixture (with splash of milk) and scramble for 1-2 minutes. continue cooking and making sure eggs don't stick to the bottom of the pan for about 4-6 minutes. Put cheese over the top and broil in the oven for 1-3 minutes. (Until eggs look done and cheese is melted.) Cut into 4 pieces and serve.
