Frittata with Cheese and Vegetables

Recipe Ingredients for Frittata with Cheese and Vegetables

3 tablespoons olive oil
1 small onion, chopped
6 eggs
3 tablespoons finely chopped parsley
1/2 cup grated Parmesan cheese
1/2 teaspoon thyme
1 small tomato, chopped
8 oz. mushrooms, sliced
2 oz. broccoli, chopped
1/4 teaspoon pepper
1 salt to taste

Recipe Directions for Frittata with Cheese and Vegetables

  1. Preheat broiler

  2. Heat oil in a heavy skillet

  3. Cook 2 cloves garlic until it is lightly brown

  4. Add the onion and cook until soft

  5. Discard garlic

  6. Removes skillet from heat.

  7. In a bowl, combine remaining ingredients.

  8. Put skillet back on very low heat.

  9. Pour in egg mixture, stirring to incorporate onions.

  10. Cover and cook 2-3 minutes until edges shrink a little

  11. Slip under broiler to brown lightly.
